Deep dish apple pie with crumble
It’s fall time again and just like every year, we have an abundance of apples. There are few things better in the fall for using up apples than an apple cake. Here is a personal favorite.
P.S. Best apples for baking in Shanghai can be found in Carrefour.
Ingredients
- 300 g plain flour
- 100 g chilled unsalted butter, chopped
- 100 g caster sugar
- 1 teaspoon baking soda
- 1 pack vanilla sugar
- 2 Eggs
- 6 large apples, peeled, cored and thickly sliced
- 50 g unsalted butter
- 50 g raisins (rum flavored)
- 1 pack vanilla pudding
- 1/2 l milk or white wine
- 150 g plain flour
- 100 g unsalted butter
- 100 g caster sugar
Preparation
Sift the flour, then rub in the butter using just your fingertips until the mixture resembles breadcrumbs. Mix in the sugar, vanilla sugar, baking soda and eggs until the mixture comes together. Chill for 30 minutes.
Put the apples, raisins and butter in a large pan. Cover and simmer for about 30 minutes, our until tender. Remove from the heat, drain and cool. Meanwhile, prepare the vanilla pudding with either milk or white whine according to package instructions.
Grease a deep, 26cm round springform tin. Roll out the chilled pastry until large enough to line the base and about 3cm of the side of your baking tin. Ease the pastry into the tin. Evenly spread chilled vanilla pudding on the bottom, then spoon the apple filling into the pie shell.
Mix butter with flour and rub in butter with just your fingertips until the mixture resembles coarse breadcrumbs. Sprinkle evenly over the top of the apple mixture to cover completely. Preheat oven to about 170 degrees and bake for 60 minutes. Allow to cool before serving.

Maybe, but I think pear and pineapple are not sour enough. It will taste too sweet
