American style cheese cake (美式芝士蛋糕)
The classic American style cheese cake as you can find it in most Shanghai coffee stores. You can change and improve this recipe in a number of ways, for example by adding fruits to the filling. Enjoy!
- 1 pack plain sweet biscuits ()
- 80 g unsalted butter, melted (黄油)
- 500 g low-fat quark (Fromage frais)
- 400 g cream cheese, softened
- 3 eggs (鸡蛋)
- 120 g caster sugar (白沙糖)
- 1 pack of vanilla sugar (香草糖)
- 1 can of cherries (樱桃)
Finely crush the biscuits in a food processor. Add the melted butter and stir until the crumbs are all moistened. Press firmly over the base of a 24cm baking tin to create an even shell. Refridgerate for 20 minutes, or until firm. Preheat the oven to 180 degrees.
Beat the quark, cream cheese, sugar and vanilla sugar until smooth. Add the eggs, one at a time, beating well after each addition. Pour carefully over the crumbs and bake for 40 minutes.
Refridgerate cake overnight if possible. Remove the cheesecake from the tin and put on a board. Serve with cherry topping.
