Apple-Curry Chicken (苹果咖喱鸡)
Sometimes local people tell me, we laowai just cannot cook good curry. I say: You bet we can! Next time you invite your Chinese friends for dinner, serve this fruity and light curry variation with apple. It is prepared in an instant and they will definitely like it!
Ingredients
- 400g chicken breast (鸡肉)
- 1 onion (洋葱)
- 1 Apple (苹果)
- 1 hot pepper (辣椒)
- 8 champignon mushrooms (蘑菇)
- 400ml chicken soup (鸡肉汤)
- 100 ml cream (奶油)
- 1 tbsp curry powder (咖喱粉)
- 2 tbsp white wine (白葡萄酒)
- Salt, white pepper (盐, 白胡椒)
Preparation
Cut onion, apple, hot pepper and champignon mushrooms into small pieces. Wash chicken meat and cut into cubes. Use a big frying pan to fry the meat for about 2 minutes, then add onions, apple, hot pepper and champignons. Let everything fry for 2 more minutes. Bespread everything with curry powder and fill up the pan with chicken stock soup. Close the lid and have it cook for about 30 minutes.
Remove pot from fireplace, take out meat and mushrooms. Puree the sauce, then put in cream and white wine. Use salt and pepper to improve flavor if necessary. Put meat back in and reheat once - Finished!
