German style Broccoli Soup (德式青花菜浓汤)

The perfect soup for a hot summer. Healthy, tasty and prepared in an instant. You can vary this dish in a number of ways, for example by using califlour or carrots instead of broccoli.

German style broccoli soup


Ingredients

  • 750 gramm fresh broccoli (青花菜)
  • 1 onion (洋葱)
  • 150ml water (水)
  • 2 vegetable stock soup cubes (蔬菜汤块)
  • 50ml cream (奶油)

Preparation

Slice onion and fry in olive oil. Wash broccoli and divide into small pieges. Put into pot together with water and cook with closed lid for about 15 minutes.

Puree broccoli, add soup cubes and another 750ml of water. Heaten the soup and add cream. Use pepper, salt and mouscat to improve the flavor - finished!

Add broccoli - Spare some for decoration later Cook for about 15 minutes with closed lid Puree soup with hand mixer
Add 50ml of cream, 750ml of water and 2 stock soup cubes Finished! Bon appetite!

More cream …. :) or use (heavy) sour cream and for the final kick perhaps a tiny little bit of nutmeg.

Don’t use too much cream here, maybe even don’t use any cream at all. It is basically only used to make the soup feel more “smooth”.

Apart from that it’s just adding calories to an otherwise very healthy soup, so you shouldn’t do that.

how about using milk instead of cream?

You can do that, however I would suggest reducing water then.
